2 Oz butter or 2 table spoons of oil
2 large Carrots
1 large Onion
1 Red pepper
1 Tin Chopped Tomatoes
1 Garlic Clove
2 large tablespoons of Tomatoe puree
Veg or Chicken stock cubes
1 1/2 pint of water
Chop the onions, deseed and chop the pepper.
Fry Onions and pepper until soft
add crushed garlic clove and tomatoe puree and stir through and fry for a few minutes.
Grate the carrots add into pot and fry for a few minutes.
Add the tinned tomatoes, water and stock cubes and bring to boil, turn down and simmer for 15 minutes.
Blend soup untill smooth, to make it extra smooth after blending put soup through a sive
Add cream to taste
