Recipes for Soups

Soups are just great, so many different things can be used in home made soups.

Many of the soups I make have the same starting ingredient.... an onion!

I will start this blog with one of my all time favourite soups.

Mushroom and Brocoli

I know you are probably thinking Yuk :0 thats what I thought when my mother in law presented me with a bowl of Green Soup. But you will be plesantly surprised.

Ingredients

2 oz butter or a few table spoons of oil.

1 garlic clove crushed.

One large onions finely chopped.

1 box of mushrooms.

1 pack of brocoli

Chicken stock cubes

Water

Single cream (optional)


Firstly Fry the chopped onions in butter or oil untill soft.

Chop the mushrooms and add them in with the onions, also add the crushed garlic.

Fry untill the mushrooms are cooked.

Seperate the brocoli florettes from the stems and add the florettes along with around 1 1/2 pints of water and 2 - 3 chicken stock cubes.

Bring it to the boil and turn down the heat and simmer for around 15 minutes.

Transfer into a blender and blend untill your soup is smooth.

Add cream to your own taste.

Serve with crusty buttered bread.

To make Mushroom Soup leave out the brocoli.

Watching your weight? Want to make it healthy? Chop and add all the ingredients to stock made from the water and Chicken stock cubes and bring to the boil and simmer for 15 minutes. Say NO to the Cream then blend and serve with plain crusty bread.
